The Healthy Irishman, Chef Gavan Murphy

About Chef Gavan Murphy in his own words. My name is Gavan Murphy. I am a chef specializing in healthy cuisine and this is my story: I hail from the Emerald Isle, land of greenery, sheep, pubs and Guinness. Currently I live in Los Angeles, land of sunshine, traffic, movie stars and paparazzi. I’m most often asked what the #*%! does an Irish guy know about food, let alone healthy food? Had I been asked that as a kid I wouldn’t have had a clue, except for the fact that I just loved food. I pretty much ate all I was given plus anything else I could get my hands on, especially anything that was sugary and sweet. I didn’t grow up on fast food as the kids do now-a-days, nor did I grow up in restaurants. I grew up around the dinner table eating Mum’s creations. My Mum cooked the typical Irish fare of meat and potatoes every night, yet that was not the problem. The problem came in the form of cakes, biscuits, sweets and fizzy drinks, all of which were accessible in and around school. All of those sweets made me a chunky monkey. And to top it off I wasn’t into exercise and sports. It wasn’t so much that I was lazy, I just really didn’t want to have to get changed in front of others. I was embarrassed. I was the guy hiding in the toilets during P.E. class or the one wearing a T-shirt in the pool. Being a teenager is tough enough, being a tubby teenager is no picnic. Moving swiftly on. I became more aware of the type of food I was eating once I got into my mid-teens because I actually started playing sports and in conjunction with eating better, I began losing the weight. My love for food never dissipated, yet thankfully my sweet tooth did. Instead I began developing a new appreciation for eating proper food, which kept with me through my college years in Dublin. After college I headed off to Martha’s Vineyard for the summer where I got my first restaurant job washing dishes. I loved it. The hustle and bustle of the kitchen was electrifying. I worked hard but the chefs worked harder. I knew just from watching them that was what I wanted to do. Upon my return to Ireland I wasted no time and headed to the lush countryside of Cork to train at the infamous Ballymaloe Cookery School. Situated in the middle of a 100 acre farm, half of which is organic today, Ballymaloe was a pioneer in sustainable cooking. What was grown on the farm and what was locally reared is what we used in our cooking and what we ate. I learned the importance of eating fresh, farm to table food and the importance of using quality ingredients including meats. Pairing this knowledge with the way I grew up eating (I’m talking proper homemade food eaten at the dinner table NOT including the sugary stuff) is where my style and flavour were born. In 2000, after working in restaurants throughout Ireland and London, my journey landed me across the pond to sunny California–I couldn’t handle anymore of the Irish winters! Los Angeles, being the mecca of health and fitness (I saw that at Gold’s Gym) was the perfect destination to continue my career in healthy cooking. I began working for a number of prestigious L.A. based catering companies and was hired as a consulting chef on the Body-for-Life Program for EAS, a multinational sports and nutrition company. At that time Cindy Crawford was following the BFL food program so guess who was hired to be her personal chef cooking healthy nutritious meals? That would be me. Timing couldn’t have been better. With that experience under my belt I ultimately transitioned into working as a full time personal chef specializing in cooking healthy meals. I was fortunate enough to find true love at my local pub (I might be healthy but I am Irish!) and boy did I get lucky. Not only did I find a great missus but I also gained a great business partner. We started out with a small food blog called–wait for it–The Healthy Irishman (cheeky but spot on) showcasing healthy recipes. That idea snowballed into The Healthy Irishman, Inc., our stellar catering company here in tinsel town, which I’m very proud to be a part of with my missus. I’m also proud to say my recipes have been published in books and magazines and I’m a regular contributor to other websites. You name it, I do it, all in the sake of healthy eating. And I still find time to provide recipes for our blog, which is now a part of this site. Not too shabby for a small town Irishman! Of course I have bigger goals but my focus and passion remain the same with everything I do: to show people that cooking doesn’t have to be complicated and healthy food doesn’t mean bland or boring. We’re advocates of buying local, seasonal and sustainable foods and I encourage people to get away from the convenient “out of a box” food and to get back to the basics of home cooking. The Toughest Nerd in MMA, Kickboxer Maureen “BABY FACE” Riordon

Maureen “Baby Face” Riordon began training in January of 2010 when she joined FusBoxe Mixed Martial Arts and Fitness in Westminster, Colorado. She did not have any athletic experience when she started out, but found herself in her first grappling tournament only three short months later. she became addicted to the sport at once and went on to claim seven gold medals in the next six months, and took both first and second place in nationally ranked tournaments. After numerous fights falling through for every reason under the sun, her first fight finally came through for her in June of 2011 for Ring of Fire’s Muay Thai Mayhem against Allison Lantz. Since then she has had ten amateur fights in total, ranging across MMA, kickboxing, boxing, and Sanda and she made her professional kickboxing debut May 3rd for Glory Sports Internationa. Action Film Star Olivier Gruner

https://ucwradio.com/podcast/media/2015-05-15_oliviergruner_interviewucw.mp3 Following his graduation from the rugged training of the French Special Forces (similar to the U.S. Navy SEALS), former soldier-turned-action star Olivier Gruner applied the skills he had developed while in uniform both to an extensive list of dynamic screen roles and the intense preparation for the look and the moves each one has required along the way. Gruner joined his country’s elite Special Forces Commando Marines when he was only 17 years old. “They taught us to never give up, no matter what,” he recalls. “They put us through intense training courses; there’s a lot of selection – only one in a thousand guys makes it,” he observed at the end of the Nineties when we caught up with him about his career. Using Combat Skills to Break Through into Screen Career During his two years of commando service, Gruner acquired a formal knowledge of martial arts and hand-to-hand combat. “It’s easy to have a gun and just to shoot people,” he points out. “I was more impressed with what you could do with your bare hands.” Early on, physical training follows a fairly conventional routine for the French servicemen: “Running, back-packing, push-ups, rope work, martial arts,” he recalls as all part of the regimen. Soon however, the conditioning turns extreme as each soldier must develop the ability to handle both the unfamiliar and the near impossible. After completing his military service, Gruner continued to pursue more training in the martial arts, first in the south of France for a year, before moving on to Switzerland. Then he returned to his homeland once again to study kickboxing. His interest finally brought him to the States during the early Eighties. With his existing martial arts experience, he wanted to also learn boxing and combine the two skills to become strong kickboxer. Making the Transformation to Onscreen Action His dedication eventually paid off when he twice won his country’s national kickboxing championships by the mid-Eighties. By this time he was also intent on building a career in the world of action movies – a journey that began with a kickboxing poster he had on display at the Cannes Film Festival in 1989. It was seen by a film producer who arranged a casting meeting for Gruner in Los Angeles. Gruner was soon given the lead role in a low-budget, nonstop action movie called Angel Town, set on the rough side of L.A. It went over well with martial arts moviegoers world-wide and earned him an extended contract with the film’s producers. His second appearance came in the futuristic thriller, Nemesis, playing a part-human, part-cybersynthetic L.A.P.D. agent. Gruner’s screen roles in the years since have usually required him to demonstrate a variety of physical skills, and to be in peak condition. Following Nemesis, he took on another futuristic role in Automatic, as a slightly defective prototype cyborg. Next, he learned to ride English saddle as a French cavalry officer in Savate, an historical adventure drama set in the American Southwest. These days, as an established action star Gruner remains as dedicated to his training regimen as in his earlier days in America. He likes to drive over to Venice to train six days a week whenever he is at home – a routine that might sound easy and fun, but is actually grueling as far as the demands he puts on both his physical and mental endurance levels to achieve the optimum look and fitness conditioning for an upcoming screen role. One past role, for instance, was the lead character of a backwoodsman in the sci-fi thriller Savage. His training for this began at dawn, with 40 minutes on the life cycle or treadmill. Then he would let his trainer take over, pushing him through another two hours of chest and triceps training on Mondays; legs, calves and abs on Tuesdays; back and biceps on Thursdays; and shoulders and lower body on Fridays. Deriving the Maximum Results from Balanced Training For maximum benefits, Gruner maintains total concentration during both the extension and contraction of each weight movement. “We go to failure of the muscle. My trainer has me work both the positive and the negative. For instance, when you perform curls, make sure your biceps are contracted both on the way up and on the way down. This makes it harder because you don’t have time to relax. If you do 10 reps on the first set in this fashion, you’re going to make the muscle feel like you performed 20 because you’re making sure that the negative movement is still contracting the muscle.” On his days away from the weights he likes to do cardio – taking advantage of the diversity of the southern California landscape: “I do some running and sometimes hiking just to relax. I also kayak and I go skiing.” Having put himself through the most demanding preparation for multiple action roles, Olivier Gruner has become a firm believer in what can be achieved by following a routine built on stamina and self-discipline. “It’s amazing what you can do with the right training and understanding of what you’re going to do, with the food you put inside your body and the changes that you’re able to make from that,” he concludes. “If somebody tells you that you can’t do it, don’t believe them. Acclaimed Actor Dennis Christopher

Award-winning actor, Dennis Christopher, stars as Leonide Moguy in Django Unchained, Quentin Tarantino’s action epic set in the antebellum American South, about a ruthless bounty hunter and the slave he promises to free upon capturing their quarry. The film, also starring Leonardo DiCaprio, Christoph Waltz, Jamie Foxx, Samuel L. Jackson and Kurt Russell, is set for release on Christmas Day, 2012. Christopher portrays the lawyer to DiCaprio’s Calvin Candie, the owner of a plantation where slaves are forced to fight one another. Into this world enters bounty hunter Dr. King Schultz (Waltz) and his slave Django (Foxx), whose ultimate goal is to find and free his still enslaved wife. Throughout his career, Christopher has had the good fortune of working with many a legendary film director. In addition to Tarantino, Christopher has worked with Federico Fellini (Roma), Robert Altman (3 Women and A Wedding), Hugh Hudson (Academy Award winning Best Picture, Chariots of Fire), Peter Werner (Don’t Cry, It’s Only Thunder) and Randall Kleiser (It’s My Party). He is perhaps best remembered for his role in Breaking Away, as the idealistic cyclist Dave Stoller, a working class boy who fantasizes about being an Italian bike racer, and looks forward to the day when an international race will bring excitement to his boring hometown. The film, also starring Dennis Quaid, Daniel Stern and Paul Dooley, was the sleeper hit of 1979. My first “real” modeling job came when I was about 15 yrs. old. I modeled for my mothers vintage clothing book entitled “Psychedelic Chic.” My mom has and always will be my biggest inspiration in life. A vintage clothing and antique jewelry collector of over 30 years, owning stores and writing books on all her treasured collectibles. I traveled around with her from store to store and state to state. My Dad was in the military, so I guess you can call me an Army Brat! I learned a lot about fashion growing up, so I guess that’s why I knew I wanted to be a fashion designer at the age of 13. Getting accepted into The Fashion Institute of Technology may have been one of the happiest days of my life! So I leave my small town of Hazleton Pennsylvania and pack my bags to head to New York City. While attending FIT and studying Fashion Design, I got approached to do acting and modeling jobs. I focused on getting my degree and pursuing acting/modeling once I graduated. And that’s exactly what I did! My favorite part of it all is the traveling and just doing something new every day. Allison Moyer is an NPC National level figure athlete, fitness, model, personal trainer, and nutritional consultant. Born and raised in rural Pennsylvania, Allison learned at an early age the importance of hard work, dedication, and commitment to one’s goals. She was raised in a very active and health conscious family and growing up was encouraged to participate in a variety of sports, including softball, soccer, field hockey, track and field, and cross country. Once Alli entered her college years, her focus shifted and she began to focus on her love of weight lifting and nutrition. At the young age of 19 she embarked on her first contest diet and by the age of 23 she had not only competed in her first show, but qualified for national status as well. To date, Alli has graced the national figure stage 4 times and continues to challenge herself both in and out of the industry.  With a successful competitive and modeling career underneath her belt, Alli is now seeking to reach out to others with her belief in healthy, positive, and balanced living.
