At 6’ 6”, 280 pounds, Chuck’s size and drive to be the best took him from the Navy to a college basketball scholarship to becoming a six-time World Tag Team Champion in professional wrestling in the WWE and WCW. Throughout his career, Chuck has never lost his passion for building, and in 2005 he opened CP Kustoms to work on bikes and cars during his free time from wrestling. When he retired from wrestling in 2008, he made CP Kustoms his full time business. The Healthy Irishman, Chef Gavan Murphy

About Chef Gavan Murphy in his own words. My name is Gavan Murphy. I am a chef specializing in healthy cuisine and this is my story: I hail from the Emerald Isle, land of greenery, sheep, pubs and Guinness. Currently I live in Los Angeles, land of sunshine, traffic, movie stars and paparazzi. I’m most often asked what the #*%! does an Irish guy know about food, let alone healthy food? Had I been asked that as a kid I wouldn’t have had a clue, except for the fact that I just loved food. I pretty much ate all I was given plus anything else I could get my hands on, especially anything that was sugary and sweet. I didn’t grow up on fast food as the kids do now-a-days, nor did I grow up in restaurants. I grew up around the dinner table eating Mum’s creations. My Mum cooked the typical Irish fare of meat and potatoes every night, yet that was not the problem. The problem came in the form of cakes, biscuits, sweets and fizzy drinks, all of which were accessible in and around school. All of those sweets made me a chunky monkey. And to top it off I wasn’t into exercise and sports. It wasn’t so much that I was lazy, I just really didn’t want to have to get changed in front of others. I was embarrassed. I was the guy hiding in the toilets during P.E. class or the one wearing a T-shirt in the pool. Being a teenager is tough enough, being a tubby teenager is no picnic. Moving swiftly on. I became more aware of the type of food I was eating once I got into my mid-teens because I actually started playing sports and in conjunction with eating better, I began losing the weight. My love for food never dissipated, yet thankfully my sweet tooth did. Instead I began developing a new appreciation for eating proper food, which kept with me through my college years in Dublin. After college I headed off to Martha’s Vineyard for the summer where I got my first restaurant job washing dishes. I loved it. The hustle and bustle of the kitchen was electrifying. I worked hard but the chefs worked harder. I knew just from watching them that was what I wanted to do. Upon my return to Ireland I wasted no time and headed to the lush countryside of Cork to train at the infamous Ballymaloe Cookery School. Situated in the middle of a 100 acre farm, half of which is organic today, Ballymaloe was a pioneer in sustainable cooking. What was grown on the farm and what was locally reared is what we used in our cooking and what we ate. I learned the importance of eating fresh, farm to table food and the importance of using quality ingredients including meats. Pairing this knowledge with the way I grew up eating (I’m talking proper homemade food eaten at the dinner table NOT including the sugary stuff) is where my style and flavour were born. In 2000, after working in restaurants throughout Ireland and London, my journey landed me across the pond to sunny California–I couldn’t handle anymore of the Irish winters! Los Angeles, being the mecca of health and fitness (I saw that at Gold’s Gym) was the perfect destination to continue my career in healthy cooking. I began working for a number of prestigious L.A. based catering companies and was hired as a consulting chef on the Body-for-Life Program for EAS, a multinational sports and nutrition company. At that time Cindy Crawford was following the BFL food program so guess who was hired to be her personal chef cooking healthy nutritious meals? That would be me. Timing couldn’t have been better. With that experience under my belt I ultimately transitioned into working as a full time personal chef specializing in cooking healthy meals. I was fortunate enough to find true love at my local pub (I might be healthy but I am Irish!) and boy did I get lucky. Not only did I find a great missus but I also gained a great business partner. We started out with a small food blog called–wait for it–The Healthy Irishman (cheeky but spot on) showcasing healthy recipes. That idea snowballed into The Healthy Irishman, Inc., our stellar catering company here in tinsel town, which I’m very proud to be a part of with my missus. I’m also proud to say my recipes have been published in books and magazines and I’m a regular contributor to other websites. You name it, I do it, all in the sake of healthy eating. And I still find time to provide recipes for our blog, which is now a part of this site. Not too shabby for a small town Irishman! Of course I have bigger goals but my focus and passion remain the same with everything I do: to show people that cooking doesn’t have to be complicated and healthy food doesn’t mean bland or boring. We’re advocates of buying local, seasonal and sustainable foods and I encourage people to get away from the convenient “out of a box” food and to get back to the basics of home cooking. Di Lee is a media artist in Los Angeles, California. Her strong sense of culture and heritage comes from being a half Chinese, and half Italian, American. The Toughest Nerd in MMA, Kickboxer Maureen “BABY FACE” Riordon

Maureen “Baby Face” Riordon began training in January of 2010 when she joined FusBoxe Mixed Martial Arts and Fitness in Westminster, Colorado. She did not have any athletic experience when she started out, but found herself in her first grappling tournament only three short months later. she became addicted to the sport at once and went on to claim seven gold medals in the next six months, and took both first and second place in nationally ranked tournaments. After numerous fights falling through for every reason under the sun, her first fight finally came through for her in June of 2011 for Ring of Fire’s Muay Thai Mayhem against Allison Lantz. Action Film Star Olivier Gruner

https://ucwradio.com/podcast/media/2015-05-15_oliviergruner_interviewucw.mp3 Following his graduation from the rugged training of the French Special Forces (similar to the U.S. Navy SEALS), former soldier-turned-action star Olivier Gruner applied the skills he had developed while in uniform both to an extensive list of dynamic screen roles and the intense preparation for the look and the moves each one has required along the way. Gruner joined his country’s elite Special Forces Commando Marines when he was only 17 years old. “They taught us to never give up, no matter what,” he recalls. “They put us through intense training courses; there’s a lot of selection – only one in a thousand guys makes it,” he observed at the end of the Nineties when we caught up with him about his career. Using Combat Skills to Break Through into Screen Career During his two years of commando service, Gruner acquired a formal knowledge of martial arts and hand-to-hand combat. “It’s easy to have a gun and just to shoot people,” he points out. “I was more impressed with what you could do with your bare hands.” Early on, physical training follows a fairly conventional routine for the French servicemen: “Running, back-packing, push-ups, rope work, martial arts,” he recalls as all part of the regimen. Soon however, the conditioning turns extreme as each soldier must develop the ability to handle both the unfamiliar and the near impossible. After completing his military service, Gruner continued to pursue more training in the martial arts, first in the south of France for a year, before moving on to Switzerland. Then he returned to his homeland once again to study kickboxing. His interest finally brought him to the States during the early Eighties. With his existing martial arts experience, he wanted to also learn boxing and combine the two skills to become strong kickboxer. Making the Transformation to Onscreen Action His dedication eventually paid off when he twice won his country’s national kickboxing championships by the mid-Eighties. By this time he was also intent on building a career in the world of action movies – a journey that began with a kickboxing poster he had on display at the Cannes Film Festival in 1989. It was seen by a film producer who arranged a casting meeting for Gruner in Los Angeles. Gruner was soon given the lead role in a low-budget, nonstop action movie called Angel Town, set on the rough side of L.A. It went over well with martial arts moviegoers world-wide and earned him an extended contract with the film’s producers. His second appearance came in the futuristic thriller, Nemesis, playing a part-human, part-cybersynthetic L.A.P.D. agent. Gruner’s screen roles in the years since have usually required him to demonstrate a variety of physical skills, and to be in peak condition. Following Nemesis, he took on another futuristic role in Automatic, as a slightly defective prototype cyborg. Next, he learned to ride English saddle as a French cavalry officer in Savate, an historical adventure drama set in the American Southwest. These days, as an established action star Gruner remains as dedicated to his training regimen as in his earlier days in America. He likes to drive over to Venice to train six days a week whenever he is at home – a routine that might sound easy and fun, but is actually grueling as far as the demands he puts on both his physical and mental endurance levels to achieve the optimum look and fitness conditioning for an upcoming screen role. One past role, for instance, was the lead character of a backwoodsman in the sci-fi thriller Savage. His training for this began at dawn, with 40 minutes on the life cycle or treadmill. Then he would let his trainer take over, pushing him through another two hours of chest and triceps training on Mondays; legs, calves and abs on Tuesdays; back and biceps on Thursdays; and shoulders and lower body on Fridays. Deriving the Maximum Results from Balanced Training For maximum benefits, Gruner maintains total concentration during both the extension and contraction of each weight movement. “We go to failure of the muscle. My trainer has me work both the positive and the negative. For instance, when you perform curls, make sure your biceps are contracted both on the way up and on the way down. This makes it harder because you don’t have time to relax. If you do 10 reps on the first set in this fashion, you’re going to make the muscle feel like you performed 20 because you’re making sure that the negative movement is still contracting the muscle.” On his days away from the weights he likes to do cardio – taking advantage of the diversity of the southern California landscape: “I do some running and sometimes hiking just to relax. I also kayak and I go skiing.” Having put himself through the most demanding preparation for multiple action roles, Olivier Gruner has become a firm believer in what can be achieved by following a routine built on stamina and self-discipline. “It’s amazing what you can do with the right training and understanding of what you’re going to do, with the food you put inside your body and the changes that you’re able to make from that,” he concludes. “If somebody tells you that you can’t do it, don’t believe them. Acclaimed Actor Dennis Christopher

Award-winning actor, Dennis Christopher, stars as Leonide Moguy in Django Unchained, Quentin Tarantino’s action epic set in the antebellum American South, about a ruthless bounty hunter and the slave he promises to free upon capturing their quarry. About Amber in Her Own Words I started out in entertainment as a very young girl. Beauty pageants, dance recitals, theater, music lessons, chorus, gymnastics, cheerleading competitions, you name it! My first “real” modeling job came when I was about 15 yrs. old. I modeled for my mothers vintage clothing book entitled “Psychedelic Chic.” My mom has and always will be my biggest inspiration in life. A vintage clothing and antique jewelry collector of over 30 years, owning stores and writing books on all her treasured collectibles. I traveled around with her from store to store and state to state. My Dad was in the military, so I guess you can call me an Army Brat! I learned a lot about fashion growing up, so I guess that’s why I knew I wanted to be a fashion designer at the age of 13. Getting accepted into The Fashion Institute of Technology may have been one of the happiest days of my life! So I leave my small town of Hazleton Pennsylvania and pack my bags to head to New York City. While attending FIT and studying Fashion Design, I got approached to do acting and modeling jobs. I focused on getting my degree and pursuing acting/modeling once I graduated. And that’s exactly what I did! My favorite part of it all is the traveling and just doing something new every day. A little over a year ago I shot a video for a presidential candidate, Barack Obama. Martial Artist and Fitness Pro Linda Josefsson “Lady Viking”

Linda Josefsson was featured on the UCW Radio Show with Louis Velazquez to share her story, he is a little more about here and her journey to date. She is a 4 time national martial arts champion and acclaimed fitness trainer. “Many people aren’t aware of her accomplishments such as being a 3rd degree black belt in Tae Kwon Do under famed martial arts Billy Blanks as well as being a part of the original Tae Bo series. She holds a degree in economics as well as in fashion design, knowledge that she has integrated into her current training programs. She studied Economics in college and has a degree in Fashion Design from Boras University in Sweden. Growing up Linda was competitive in several sports including track & field, horse back riding, soccer and cross country skiing. She later moved to France to pursue a career as a professional horse trainer in Western riding. In 1990 Linda moved to California as an exchange student and during this time she was introduced to 7-time World Karate Champion and Tae-Bo creator Billy Blanks. It was here she found her deep passion for martial arts and the place she would call “home” for the next 29 years. Linda was always a natural athlete and after only 2 years she received her black belt from Mr. Blanks. All the hard work and countless hours of training later resulted in 4 National Championships as well as a tournament win in amateur boxing. A shoulder injury prevented Linda from doing further competitive boxing but instead she’s been sharing her skills and knowledge teaching martial arts. Today Linda is a 3rd degree black belt in Tae Kwon Do and a very accomplished personal trainer, corporate trainer and group exercise instructor. She graduated from the Boston Conservatory with a Bachelor’s in Music: Vocal Performance & Opera Emphasis, achieving the second highest vocal score in her class. After graduation, Dawn performed in operas and musicals around the world, as well as a guest entertainer aboard international cruise ships, displaying an uncanny ability to transition from singing a Puccini aria to a jazzy torch song. Cabaret Awards & Performances In 2008, Dawn, having lived in New York City for several years, began to pursue a Cabaret career. Over the past 12 years, she has performed in prestigious venues, including the Weill Center at Carnegie Hall, Birdland Jazz Club, The Laurie Beechman Theater, Don’t Tell Mama, The Friars Club, the Bitter End, The Cutting Room, Carroll Place, and most recently The Green Room 42. Dawn used her songwriting and guitar abilities throughout her Cabaret performances, leading to high praise for her shows. Dawn soon after began reeling in the awards. Her CD Music 4 TWO with award-winning guitarist Sean Harkness earned her a 2014 nomination for “Best CD” from the Manhattan Association of Cabarets and Clubs (MAC). In 2015, Dawn won her first MAC award for her work in the duo show REVOLUTION with Kathleen France. In 2016, Dawn employed her formidable opera singing skills in her solo show LEGIT: A Classical Cabaret. She received a Bistro Award for “Outstanding Vocalist” for her performance. Two years later, Dawn won the 2018 MAC Award for “Best Female Vocalist” for her critically acclaimed show, My Ship: Songs from 1941. Her director, Jeff Harner, also won “Best Director” from the Bistro and MAC awards. Dawn will be releasing an album of her songs from MY SHIP: Songs from 1941 in the summer of 2021. Dawn’s most recent show, The House That Built Me, played to packed audiences at the Laurie Beechman Theater. Based on her love for her father’s vast record collection that Dawn grew up listening to, she weaves a story of how these songs inspired and helped her blossom into the multi-faceted performer she is today. After the show’s end, Cameron became a licensed contractor and was approached by DIY Network to host their landscape makeover show Desperate Landscapes in 2007. Since then, he has also been hosting Man Caves and Project Xtreme for the network. On the health and fitness front Jason Cameron is a certified personal trainer, specializing in strength and conditioning.
